Malacate is a restaurant located at Calle 70A #5-44, inside Hotel Coco, in Bogotá’s Zona G. This restaurant is the brainchild of Antioquia-born chef Jhon Zárate, known for his commitment to highlighting the quality and origin of local ingredients. Before opening Malacate in Bogotá, Zárate gained recognition for his restaurant Sambombi in Medellín.

Malacate’s culinary concept focuses on using local and seasonal ingredients. For example, meats are sourced from across the country, stracciatella cheese comes from La Calera, and corn and cubios (Andean root vegetables) are from the Cundiboyacense highlands. This philosophy not only ensures the freshness and authenticity of the dishes but also supports local farming economies.

The name “Malacate” refers to a pulley system used in kitchens to transport food between floors, a feature that has been incorporated into the restaurant’s design, blending aesthetics with its culinary concept.
