Jungsik's "new Korean cuisine" has a strong Western influence. In fact, some of his exquisite sauces wouldn't look out of place on a fine-dining French table, but what's most impressive is how the Korean elements of the dishes elevate them to a higher level. The bibimbap with gochujang, crispy quinoa, and tender Wagyu beef tartare leaves a lasting impression, while the branzino, served simply with white kimchi, demonstrates a deep confidence in the quality of the ingredients.
