Dressed in white and wearing a bow tie, Yujiro Watanabe welcomes his guests with a smile. His elegant spirit of service is described as "delicious, fun, and welcoming." Three highlights are the ground sesame seeds in a large bowl, the shaved karasumi (salted and dried mullet roe) prepared in front of the customers, and the open kitchen. He uses Niigata rice, grown by his sister and her husband. The sea bream chazuke (green tea poured over rice) is a legacy from his mentor. Gratitude is palpable in the atmosphere, and conversations are lively.
