If you’ve set out on a major international road trip or have ever dreamed of doing so, you’ll definitely relate to the chef at this restaurant, whose name (along with the decor) refers to the number of borders that owner-chef Dave Soady crossed in his van when he traveled from his native USA to Argentina. With a somewhat casual atmosphere and an ethnic touch to its design (e.g., walls reminiscent of adobe huts, corncob lights, etc.), the restaurant is dominated by a large Guayubira wood counter that allows the chef to interact with guests. The aim of the cuisine here is to bring together all the flavors he discovered during his journey through Central and South America through small plates featuring creative and fusion-inspired elements (Christmas in Panama, vegetarian “pupusas,” taco tastings, Jorge “the hunter,” etc.). The end result is unique, fun, and highly entertaining!
