The only Salvadoran restaurant on the Latin America's 50 Best Restaurants list, El Xolo pays tribute to heirloom corn and the indigenous communities that cultivate it. Chefs Gracia Navarro and Alex Herrera have spent more than eight years exploring El Salvador to create a menu that connects directly with local producers, without intermediaries. Located inside the National Museum of Anthropology, the space combines exposed wood, niches displaying Mesoamerican artifacts, and warm lighting that creates an experience as cultural as it is gastronomic. The "Folklore" tasting menu is a journey through Salvadoran history and folklore, using both traditional and contemporary techniques.
