Pajares Salinas is an iconic Spanish restaurant located in Bogotá, Colombia. Founded in 1953 by Spanish chef Saturnino Pajares, it has maintained its prestige for over seven decades, establishing itself as a culinary benchmark in the city. We are joined by Zuleima Pajares of Pajares Salinas, who tells us more about the restaurant’s history and evolution: «Hello Zuleima, first of all, thank you very much for sharing your experience in Colombia. I'd like to ask you a little about the history of this place, which has been around for more than 70 years. How did it start, where are we now, and what are the plans for the future?»
Zuleima replies: «After two years of renovating the establishment, we remodeled, expanded, and modernized it. We hosted a couple of events that marked a turning point before and after the pandemic. We have now been in business for 71 years, and we are a culinary institution with extensive experience. As for where we’re headed, I believe our goal is to continue working every day to do things right.»

We’re now in the fourth generation of families who have made Pajares Salinas their favorite place, ordering the same dishes their grandparents once enjoyed.»
