Tacos Charly is a very busy place in Tlalpan, south of Mexico City, so it is advisable to arrive early or be prepared to wait, and don't forget to bring cash as they do not accept credit cards. Come try their suadero, which they first confit and then simmer in water for a juicier taco. Be sure to try their al pastor tacos, prepared in a special station where the cook skillfully handles the top. The tender, flavorful meat is sliced thinly and deliciously complemented by a touch of rendered fat.
