At this restaurant, located across from one of the iconic cobblestone streets leading to the famous Praza das Praterías and the cathedral, the staff is pleased to announce that Simpar’s daily menus are always prepared with fresh ingredients sourced that same day from trusted suppliers, whose names they are happy to share with customers. In a contemporary-style interior, featuring a large bar at the entrance, the young local chef Áxel Smyth presents his fresh and creative cuisine inspired by Galician gastronomy through three menus: Corto (available only for lunch on weekdays), Get to Know, and Simpar. Each menu offers the option to add an extra dish—an updated version of traditional tripe with chickpea stew—which greatly enriches the dining experience. One of its signature dishes is the Galician-style fish of the day, which varies by season and is served with mashed potatoes and a garlic sauce in three textures.
