Tacos Charly is a very busy spot in Tlalpan, south of Mexico City, so it's a good idea to arrive early or be prepared to wait, and don't forget to bring cash since they don't accept credit cards. Come try their suadero, which they first confit and then simmer in water to make for a juicier taco. Be sure to try their al pastor tacos, prepared at a special station where the cook skillfully rotates the spit. The tender, flavorful meat is sliced thinly and deliciously complemented by a touch of rendered fat.
